Avo Fro Yo.

I love avocados. They make my world a very happy place. I also love frozen yogurt, ice cream, and any frozen dairy treat (in moderation). So, an attempt at making a batch of somewhat healthy avocado frozen yogurt was a must-try. Because I have yet to find some in the frozen treats section of the grocery store.

Here’s how to make it. It’s really quite scrumptious in it’s own advocadolicious way.

Avocado Frozen Yogurt:

Combine the following in a food processor:

• 1 large ripe avocado

• ½ cup nonfat greek yogurt

• 4 tbs lemon juice

• 4 tbs agave nectar or honey

• 2 tbs coconut oil.

* If avocados don’t make your world a better place, (it’s ok, I won’t judge) and you want a little extra flavor, add in ½ cup frozen mangos, pineapple, or some kiwi. Chopped up, that are also great toppings too.

Blend until whipped, smooth, and fluffy….

It will be a bit of a mousse like consistency. But it still is delish.

Pour in container and freeze for a while

Thaw a little bit before eating. Then and enjoy a little, green, chocked full of goodness, frozen, treat.

I might even try to eat some with tortilla chips. Even though that eliminates the healthy part.
