Mac nut coconut chia butter. Yum. Try it.

What happens when I live next to a health food store with big barrels full of various nuts, and an über strong food processor needs some love? Macadamia nut coconut oil chia seed butter is what happens. Word.

I think it’s a rather delish, yet different addition to the nut butter rotation. And hey, it’s mac nuts, which remind me of Hawaii. So that makes it extra sweet.

Combine the following in a food processor (Yeah Ninja):

• 2 cups macadamia nuts (plain)

• 3-4 tbs Coconut Oil 

• 3 tbs Chia seeds (any kind)

• 2-3 tbs agave nectar or honey

• 1 tsp sea salt

…blend until it’s as smooth as you want , and enjoy. 

*Since the mac nut and coconut oil combo is pretty rich, it tastes really good when paired with something a little tart. 

I had some on whole wheat toast this AM, with pomegranate seeds and avocado slices on top.

I might go have some more.
