Coconut oil. It’s amazing for you (just ask Dr. OZ.) I actually eat a tablespoon of it in the morning, then another one after dinner. I swear it helps cure cravings for sweets…and Miranda Kerr does the same thing, so I’m hoping I grow dimples.
Peanut Butter, well that’s a household staple. Filling, full of protein and good stuff, I slather it on a lot of things. So, when I stumbled on a jar of coconut peanut spread. A large light bulb went off above my head.
I had to try and make it. And I did. And it’s delicious. So I had to share.
Coconut Peanut Butter:
In a food processor or high powered blender (I use the Ninja) combine the following:
8 oz peanuts (shelled salted or unsalted. I used plain old planters.) Feel free to try other nuts.
3-4 TBS Coconut Oil
2-3 TBS Agave nectar ( or you can use honey too)
Blend/Process for a minute at a time until desired consistency is achieved. Add more coconut oil for a more creamy spread.
Eat it up. I swear it tastes almost like peanut butter cookie dough.
